  • 1 pound ground beef Any type of ground beef can be used.
  • 1 cup rice Regular long-grain white rice is recommended.
  • 2 cups beef broth Can use either store-bought or homemade.
  • 1 cup corn Sweet corn, canned or frozen.
  • 1 packet ranch seasoning mix Adjust according to taste preference.
  • 1 cup shredded cheese Any cheese that melts well can be used.
  • 1 tablespoon olive oil For cooking the beef.
  • to taste Salt and pepper Season according to personal preference.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat.
  • Stir in rice, beef broth, corn, and ranch seasoning. Mix well.
  • Bring the mixture to a boil, then reduce heat, cover, and simmer for about 15 minutes or until the rice is cooked.
  • Transfer the mixture to a casserole dish and top with shredded cheese.
  • Bake in the preheated oven for 20 minutes or until cheese is melted and bubbly.
  • Let cool for a few minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for 3 to 4 days, or freeze for 2 to 3 months. You can also use brown rice for a healthier option, but it may require more cooking time.
