Ingredients
  

Main Ingredients

  • 2 cups shredded cooked chicken You can use rotisserie chicken for convenience.
  • 1 cup BBQ sauce Adjust the amount based on your taste.
  • 2 cups shredded cheese Cheddar or mozzarella work well.
  • 8 pieces tortillas Flour or corn tortillas can be used.
  • 1 tablespoon olive oil For cooking the quesadillas.

Garnishes

  • to taste green onions Optional for garnish.
  • to taste cilantro Optional for garnish.

Instructions
 

Preparation

  • In a bowl, combine shredded chicken with BBQ sauce.

Cooking

  • Heat olive oil in a skillet over medium heat.
  • Place a tortilla in the skillet, sprinkle half with cheese, then add a portion of the chicken mixture on top.
  • Fold the tortilla in half and cook until golden brown, about 3-4 minutes on each side.
  • Repeat with remaining tortillas.
  • Slice and serve with optional garnishes.

Notes

If you have leftover quesadillas, let them cool before placing in an airtight container. Store in the refrigerator for up to 3 days. Reheat in a skillet or microwave. You can also freeze them before cooking, just wrap tightly and cook from frozen when ready.
