Main Ingredients

  • 2 cups cooked shredded chicken Use rotisserie chicken for convenience.
  • 1/2 cup barbecue sauce Choose your favorite flavor.
  • 2 cups shredded cheddar cheese Can substitute with other cheeses.
  • 4 large flour tortillas Keep them warm in foil while cooking.
  • 1/4 cup chopped green onions Optional garnish.
  • 2 tablespoons olive oil For cooking the quesadillas.

Preparation

  • In a bowl, combine shredded chicken and barbecue sauce until well coated.

Cooking

  • Heat 1 tablespoon olive oil in a large skillet over medium heat.
  • Place one tortilla in the skillet, sprinkle with 1/2 cup shredded cheese, and spread 1/2 cup BBQ chicken mixture evenly over the cheese.
  • Top with another 1/2 cup shredded cheese and cover with a second tortilla.
  • Cook for 3-4 minutes until the bottom tortilla is golden and the cheese begins to melt.
  • Carefully flip the quesadilla and cook another 3-4 minutes until golden and cheese is fully melted.
  • Remove from the skillet and repeat with remaining tortillas and filling.
  • Slice into wedges, garnish with chopped green onions if desired, and serve warm.

Notes

For serving, pair with dipping sauces like ranch or extra barbecue sauce. These quesadillas can be cut into wedges for easy sharing. Leftovers can be stored in an airtight container for up to three days.
