Salad Ingredients

  • 4 cups Mixed salad greens
  • 1 cup Cherry tomatoes, halved
  • 1 cup Cucumber, diced
  • 1/2 cup Red onion, thinly sliced
  • 1 cup Corn, canned or grilled
  • 1 can Black beans, rinsed and drained
  • 2 cups Cooked chicken breast, diced Rotisserie chicken can be used for convenience.

Dressings and Toppings

  • 1/2 cup BBQ sauce Adjust to taste.
  • 1/2 cup Chipotle ranch dressing Or use a regular ranch dressing if preferred.
  • 1 cup Cheddar cheese, shredded
  • 1/4 cup Cilantro, for garnish

Instructions
 

Preparation

  • In a large bowl, combine mixed salad greens, cherry tomatoes, cucumber, red onion, corn, and black beans.
  • Add diced chicken and drizzle with BBQ sauce, then toss to combine.
  • Drizzle chipotle ranch dressing over the salad and toss again.
  • Top with shredded cheddar cheese and garnish with cilantro.
  • Serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. Keep the dressing separate until ready to eat to prevent soggy greens. Can prepare ingredients in advance but add dressing just before serving.
