Main Ingredients

  • 1 lb Smoked brisket Cooked and sliced
  • 8 slices Sourdough bread For the sandwich
  • 4 oz Colby jack cheese Sliced
  • 4 oz Provolone cheese Sliced
  • 1 cup Fried crispy onions For optional crunch
  • 1 cup Caramelized onions Cooked until golden brown

Seasoning

  • 1 tbsp Mustard For coating brisket
  • to taste Favorite BBQ rub To season brisket
  • to taste BBQ sauce For drizzling

Instructions
 

Preparation

  • Prepare the brisket by seasoning it with mustard and your favorite rub. Let it refrigerate for 1-2 hours to absorb the flavors.
  • Smoke the brisket at 210°F using hickory pellets for about 9-10 hours. Once it's done, wrap it in butcher’s paper and smoke it again until it becomes tender.
  • While the brisket is cooking, caramelize diced onions in a pan until they turn golden brown.

Assembly

  • Assemble your sandwiches by placing slices of brisket, Colby jack cheese, provolone cheese, fried onions, caramelized onions, and a drizzle of BBQ sauce between two slices of sourdough bread.

Cooking

  • Toast the assembled sandwiches in a cast iron skillet over medium heat until the bread is golden brown and the cheese has melted.

Notes

Serve BBQ Brisket Melts hot, straight from the skillet, and pair with sides like pickles, coleslaw, or potato chips. For leftovers, cool completely before wrapping and store in the fridge for up to 2-3 days. Reheat in a skillet or oven until crispy.
