  • 2 large eggs
  • 1.5 cups milk
  • 2 tablespoons melted butter
  • 1/4 teaspoon salt
  • 1 tablespoon sugar (optional, for sweet crepes)

Preparation

  • In a mixing bowl, whisk together the flour, eggs, and milk until smooth.
  • Stir in melted butter, salt, and sugar if using.
  • Let the batter sit for about 30 minutes to improve the texture of the crepes.

Cooking

  • Heat a non-stick skillet over medium heat and lightly grease with butter or oil.
  • Pour about 1/4 cup of batter into the skillet, tilting the pan to spread the batter evenly.
  • Cook for about 1-2 minutes until the edges start to lift, then flip and cook the other side for another minute.
  • Repeat with the remaining batter, stacking the finished crepes on a plate.

Notes

Serve with sweet toppings like fruits and whipped cream or savory fillings like cheese and ham. To store, stack cooled crepes with parchment paper and refrigerate for up to 3 days or freeze for up to 2 months.
