Ingredients
  

For the rice

  • 2 cups cooked jasmine rice Prepare according to package instructions.

For the bang bang sauce

  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha sauce Adjust according to your spice preference.
  • 1 tablespoon lime juice

For the turkey and vegetables

  • 1 lb ground turkey
  • 1 cup chopped red bell pepper
  • 1 cup chopped carrots
  • 1 cup chopped broccoli
  • 1 tablespoon olive oil For cooking the turkey.
  • to taste Salt and pepper
  • 2 green onions, sliced For garnish.
  • 1 tablespoon sesame seeds For garnish.

Instructions
 

Preparation

  • Cook the jasmine rice according to package instructions, so it is ready and warm when needed.
  • In a small bowl, mix together the mayonnaise, sweet chili sauce, sriracha sauce, and lime juice to create the bang bang sauce. Set it aside.

Cooking

  • Heat a large skillet over medium-high heat and add the olive oil.
  • Add the ground turkey to the skillet, breaking it apart with a spoon, and cook until browned.
  • Once the turkey is cooked through, add the soy sauce, salt, and pepper. Stir well to combine.
  • Add the chopped red bell pepper, carrots, and broccoli to the skillet, cooking for another 5-7 minutes until the vegetables are tender-crisp.

Assembly

  • Remove the skillet from the heat and mix in half of the bang bang sauce, ensuring everything is well coated.
  • To serve, place a mound of cooked jasmine rice into individual bowls.
  • Top the rice with the turkey and vegetable mixture.
  • Drizzle the remaining bang bang sauce over each bowl.
  • Garnish with sliced green onions and sesame seeds for added flavor and texture.
  • Serve immediately and enjoy!

Notes

Adjust the spice level by adding more or less sriracha. You can also substitute ground turkey with ground chicken or beef. For a low-carb version, use cauliflower rice.
