Ingredients
  

Main Ingredients

  • 1.5 cups cooked white rice, preferably day-old Day-old rice is best as it's drier
  • 1 piece boneless, skinless chicken breast, diced Can be swapped with shrimp or tofu
  • 2 large eggs, beaten
  • 0.5 cups diced carrots Can add other veggies like bell peppers or corn
  • 0.33 cup green peas Frozen mixed vegetables can be used
  • 2 cloves garlic, finely minced
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil, plus more as needed
  • 0.25 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha sauce, adjust to taste Adjust based on spice tolerance
  • 1 teaspoon rice vinegar
  • 2 tablespoons green onions, sliced, for garnish For garnishing

Instructions
 

Preparation

  • In a small bowl, combine mayonnaise, sweet chili sauce, Sriracha, and rice vinegar. Whisk until smooth and set aside.
  • Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.
  • Add diced chicken, season lightly with salt and black pepper, and cook for 5 to 6 minutes until golden brown and fully cooked. Transfer chicken to a plate and set aside.

Cooking

  • In the same skillet, add additional oil if needed. Add carrots and sauté for 2 to 3 minutes until slightly tender.
  • Add green peas and minced garlic, stir-frying for another minute until fragrant.
  • Push vegetables to the side of the pan. Pour beaten eggs into the skillet and cook gently, stirring until just set.
  • Add cooked rice to the pan, breaking up any clumps. Stir in cooked chicken and pour in soy sauce. Toss well to combine all ingredients and heat through evenly.
  • Drizzle the bang bang sauce over the fried rice. Stir to coat and remove from heat.

Serving

  • Serve Bang Bang Fried Rice hot, garnished with sliced green onions.

Notes

If you have leftovers, store in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or stir fry in a pan with a little oil.
