  • 2 large eggs Beaten.
  • 1 cup mixed vegetables (carrots, peas, bell peppers) Can be adjusted based on preference.

Flavorings

  • 2 tablespoons bang bang sauce Adjust based on spice preference.
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil For cooking.

Garnish

  • to taste green onions, chopped For garnish.

Cooking

  • Heat vegetable oil in a large skillet or wok over medium heat.
  • Scramble the beaten eggs and set aside.
  • Add the diced chicken and mixed vegetables to the skillet, stirring for a few minutes until heated through.
  • Add the cooked rice, scrambled eggs, soy sauce, and bang bang sauce.
  • Stir everything together for 3-4 minutes until well combined and heated.
  • Garnish with chopped green onions before serving.

Notes

For best results, use cold leftover rice to avoid mushiness. This dish pairs well with spring rolls or a cucumber salad. To store leftovers, refrigerate in an airtight container for up to three days.
