  • 1 Mixing bowls for sauce and dredging
  • 1 Sharp knife for chopping vegetables

Ingredients
  

"1 lb boneless, skinless chicken breast – cut into cubes",

"1 cup cornstarch – or panko breadcrumbs",

"2 large eggs – beaten",

"1/2 tsp salt",

"1/2 tsp black pepper",

"2 tbsp oil – for frying or air frying spray",

"1/2 cup mayonnaise – or Greek yogurt",

"1/4 cup sweet chili sauce",

"1–2 tbsp sriracha – adjust to taste",

"1 tsp lime juice",

"3 cups jasmine rice – cooked",

"1 cup shredded red cabbage",

"1 cup sliced cucumbers",

"1 cup shredded carrots",

"2 green onions – sliced",

"1 tbsp sesame seeds – garnish",

"4 lime wedges – optional"

Instructions
 

Season chicken with salt and pepper. Dip in beaten eggs, then coat with cornstarch or breadcrumbs.",

"Cook chicken: Air fry at 400°F for 12–15 minutes, pan fry until golden, or bake at 400°F for 20 minutes.",

"Whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice to make the sauce.",

"Toss crispy chicken in half of the sauce. Save the rest for drizzling.",

"Assemble bowls: rice base, add chicken, layer veggies, drizzle with sauce.",

"Garnish with sesame seeds, green onions, and lime wedges. Serve immediately.

    Notes

    For less spice: use 1 chipotle pepper. For more heat: add extra peppers or cayenne. Leftovers keep 4 days in the fridge or 2 months in the freezer.
