  • 4 pieces salmon fillets (6-ounce each)
  • 2 cups fresh spinach, chopped Use fresh spinach for the best flavor and texture.
  • 1 cup shredded mozzarella cheese You can also use other types of cheese.
  • 2 tablespoons olive oil For sautéing the garlic and spinach.
  • 2 cloves garlic, minced
  • 1 teaspoon lemon juice For flavor enhancement.
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Lemon wedges for serving To enhance flavors.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a skillet over medium heat, add olive oil and sauté the minced garlic for about 1 minute until fragrant.
  • Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat.
  • In a baking dish, place the salmon fillets skin-side down. Season with salt, pepper, and dried oregano.
  • Spoon the sautéed spinach evenly over each salmon fillet.
  • Top each fillet with shredded mozzarella cheese.
  • Drizzle lemon juice over the cheese and salmon.

Baking

  • Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork and the cheese is bubbly and golden.

Serving

  • Serve hot with lemon wedges on the side.

Notes

For extra flavor, marinate the salmon in olive oil, lemon juice, and herbs for about 30 minutes before cooking. For a crispy topping, broil the dish for the last couple of minutes after baking.
