Ingredients
  

For the Sardines

  • 1 lb sardines (cleaned and scaled, fresh) Use fresh sardines for the best flavor.
  • 1 whole Lemon (sliced) For topping.
  • 2 tbsp extra-virgin olive oil For drizzling.
  • 2 cloves garlic (minced)
  • 1 tbsp parsley (chopped, fresh) Adjust according to taste.
  • 1 tbsp dill (chopped, fresh) Adjust according to taste.
  • 1 tsp dried oregano
  • Salt and pepper (to taste)

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Rinse the sardines under cold water and pat them dry with a paper towel.
  • Place the sardines in a baking dish and season with salt and pepper.

Mixing the Herb Mixture

  • In a small bowl, mix together the olive oil, minced garlic, chopped parsley, chopped dill, and dried oregano.
  • Spoon the herb mixture over the sardines, making sure to coat them evenly.

Baking

  • Top the sardines with lemon slices.
  • Bake in the preheated oven for 15-20 minutes, or until the sardines are cooked through and golden brown.

Serving

  • Serve the baked sardines hot with lemon wedges and enjoy!

Notes

This dish pairs well with a simple side of green salad, grilled vegetables, or crusty bread. Drizzle some extra olive oil and squeeze fresh lemon juice over the top for added flavor. Store leftovers in an airtight container in the refrigerator for up to 2 days.
