  • 1 pound gnocchi Store-bought gnocchi can be used.
  • 2 large onions, sliced Caramelize properly for best flavor.
  • 4 cups beef or vegetable broth Use high-quality broth for a richer taste.
  • 2 cups grated Gruyere cheese Can also top with grated Parmesan for extra cheesiness.
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh thyme for garnish Adds flavor when served.

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add sliced onions and cook until caramelized, about 20-25 minutes.
  • Add broth to the skillet and simmer for 10 minutes. Stir in heavy cream and season with salt and pepper.
  • Cook the gnocchi according to package instructions, then fold into the onion mixture.
  • Transfer to a baking dish and sprinkle Gruyere cheese on top.
  • Bake for 15-20 minutes, until cheese is bubbly and golden.
  • Garnish with fresh thyme and serve warm.

Notes

Pairs well with a simple green salad or crusty bread. Store leftovers in an airtight container in the fridge for up to 3 days.
