Ingredients
  

For the Filling

  • 2 cups cooked chicken, shredded
  • 4 oz cream cheese, softened Ensure cream cheese is softened for easier blending.
  • ½ cup shredded cheddar cheese
  • ¼ cup salsa Choose your favorite type of salsa.
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • to taste Salt and pepper

For Assembly

  • 10 small flour or corn tortillas Use whichever you prefer.

Preparation

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • In a large bowl, combine the shredded chicken, softened cream cheese, cheddar cheese, salsa, garlic powder, onion powder, cumin, salt, and pepper. Mix until creamy and well blended.

Assembling and Baking

  • Place 2–3 tablespoons of filling onto each tortilla and roll tightly. Place seam-side down on the prepared baking sheet.
  • Lightly brush or spray the tops with olive oil or cooking spray.
  • Bake for 15–18 minutes until golden and crispy.

Serving

  • Enjoy hot with sour cream, guacamole, or extra salsa for dipping!

Notes

To store leftovers, let the taquitos cool completely, place them in an airtight container, and store in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) until warmed through for the best texture. Customize with different spices, beans, or vegetables like diced bell peppers or corn.
