Ingredients
  

Vegetables

  • 1 head cauliflower, cut into florets
  • 2 large onions, thinly sliced Slice thinly for even caramelization.

  • 2 cups Gruyère cheese, grated Can substitute with cheddar or a cheese blend.

Fats and Oils

  • 2 tablespoons butter For caramelizing onions.
  • to taste olive oil For tossing cauliflower.

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a large skillet, melt the butter over medium heat and add the sliced onions. Cook, stirring frequently, until the onions are caramelized, about 15-20 minutes.
  • While the onions are cooking, toss the cauliflower florets with olive oil, salt, and pepper, and place them on a baking sheet. Roast in the oven for about 25 minutes or until tender.

Assembly and Baking

  • Once the onions are caramelized and the cauliflower is roasted, combine them in a baking dish.
  • Sprinkle the grated Gruyère cheese on top.
  • Return to the oven and bake for an additional 10-15 minutes until the cheese is melted and bubbly.

Notes

Best served warm. Pairs well with roasted meats or grilled fish. Can be stored in an airtight container in the refrigerator for 3-4 days. Reheat in the oven at 350°F (175°C).
