  • 1 lb ground beef
  • 1 small onion, diced
  • 1 tsp garlic powder
  • 1 tsp cumin

  • 1 can (7 oz) diced green chiles or 3-4 roasted poblano or Anaheim chiles, sliced
  • 2 cups shredded Monterey Jack or Mexican blend cheese
  • 4 large eggs
  • 1 cup milk
  • ¼ cup flour (or almond flour for low-carb)
  • ½ tsp baking powder
  • Fresh cilantro, sliced jalapeños, and optional salsa for garnish For serving

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  • In a skillet, cook the ground beef and diced onion until browned. Drain excess grease and season with garlic powder, cumin, salt, and pepper.

Layering

  • Layer half of the green chiles in the bottom of the baking dish. Top with the beef mixture, half of the cheese, then the rest of the chiles.

Final Assembly

  • In a bowl, whisk together the eggs, milk, flour, and baking powder. Pour this mixture over the layers in the baking dish.
  • Top with the remaining cheese and bake for 35-40 minutes, until golden and set.

Serving

  • Let it cool for 5-10 minutes. Garnish with fresh cilantro and jalapeños. Serve with salsa or sour cream.

Notes

For a spicier version, use spicy diced green chiles or add diced jalapeños to the beef mixture. If you prefer a vegetarian option, substitute the ground beef with black beans or extra vegetables. Remember to let the casserole cool slightly before serving to help it set better. You can also customize this casserole by using different kinds of cheese or adding ingredients like corn, beans, or even diced tomatoes for additional flavor and texture. Leftovers can be stored in the refrigerator for 3-4 days or frozen for 2-3 months.
