  • 1 pound gnocchi
  • 4 slices bacon, chopped
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • to taste salt
  • to taste pepper
  • for garnish chopped green onions

Instructions
 

Preparation

  • In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside.
  • In the same pot, add the diced onion and cook until translucent. Add minced garlic and cook for 1 minute.

Cooking

  • Pour in the broth and bring to a boil. Add the gnocchi and cook according to package instructions.
  • Reduce heat, stir in the cream and shredded cheddar cheese until melted and smooth.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with crispy bacon and chopped green onions.

Notes

For a thicker soup, add more heavy cream or reduce the broth. You can also add vegetables like spinach or kale for extra nutrition. Store leftovers in an airtight container in the fridge for 3-4 days.
