  • 1 lb gnocchi
  • 6 slices crispy bacon, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese Use freshly grated for best flavor.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 tablespoons olive oil
  • Chopped green onions for garnish

Preparation

  • In a large pot, heat olive oil over medium heat. Add chopped bacon and cook until crispy. Remove bacon and set aside.
  • In the same pot, add diced onion and cook until translucent. Add minced garlic and cook for an additional minute.
  • Pour in the chicken broth and bring to a simmer.
  • Add gnocchi and cook according to package instructions, usually about 2-3 minutes.
  • Stir in heavy cream and shredded cheddar cheese until well combined.
  • Season with salt, black pepper, and thyme.
  • Return the crispy bacon to the pot and stir well.

Serving

  • Serve hot, garnished with chopped green onions.

Notes

To store the soup, let it cool completely, place it in an airtight container, and keep it in the refrigerator for 3 to 4 days. You can also freeze the soup in portions for up to 3 months.
