  • 16 oz gnocchi Homemade gnocchi can be used, adjust cooking time.
  • 2 cups heavy cream or half-and-half For a lighter version, use low-fat milk or a dairy-free alternative.
  • 2 cups shredded cheddar cheese Use a good quality cheddar cheese for best flavor.

Preparation

  • Cook the bacon until crispy. Chop it into small pieces and set aside.
  • In a large pot, heat the butter or olive oil over medium heat. Add the diced onions and sliced carrots, sautéing until they are tender.

Cooking

  • Pour in the chicken broth and bring the mixture to a simmer while stirring occasionally.
  • Stir in the heavy cream and any seasonings you desire. Gradually add the shredded cheddar cheese, stirring until it melts completely.
  • Add the gnocchi to the pot and cook for about 2 minutes, or until they are tender.
  • Finally, stir in the chopped bacon, taste, and adjust seasoning if needed. Serve hot.

Notes

This soup is best enjoyed hot and can be served in bowls. You can garnish it with extra bacon bits, shredded cheese, or fresh herbs like parsley for added flavor. It pairs well with crusty bread or a simple salad for a complete meal. If you have leftovers, let the soup cool down and store it in an airtight container in the fridge for about 3-4 days. Reheat on the stove over medium heat until warmed through.
