  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, chopped
  • 1 large egg
  • 1/4 cup almond flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Oil for frying (optional)

Preparation

  • Preheat the oven to 400°F (200°C) if baking.
  • In a large bowl, combine riced cauliflower, cheddar cheese, cooked bacon, egg, almond flour, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  • Form the mixture into small tots or balls.

Cooking

  • If baking, place the tots on a lined baking sheet and bake for 20-25 minutes, flipping halfway through until golden brown.
  • Optionally, you can pan-fry them in hot oil until crispy on all sides.

Serving

  • Serve hot as a side dish with your favorite dipping sauces like ranch, barbecue sauce, or a tangy aioli.

Notes

Make sure to remove as much moisture from the riced cauliflower as possible. Adjust the spices to your taste, and for a crispier texture, try pan-frying instead of baking. Leftover tots can be refrigerated for up to 3 days and reheated in the oven or air fryer.
