  • 1 piece ripe mango Slice along the pit for easier cutting.
  • 1 cup cherry tomatoes Halve before adding to salad.
  • 1/4 cup red onion Finely chopped.
  • 1/4 cup fresh cilantro
  • 2 tablespoons lime juice Juice of 2 limes.

Preparation

  • Cut the avocados and mango into bite-sized cubes.
  • Halve the cherry tomatoes and finely chop the red onion.
  • In a large bowl, combine the avocados, mango, cherry tomatoes, red onion, and cilantro.
  • Drizzle with lime juice and season with salt and pepper.
  • Gently toss the salad to combine.
  • Serve immediately.

Notes

This salad is best enjoyed fresh. Store in an airtight container but consume within a day to maintain quality. Add diced jalapeño for spice and experiment with additional ingredients like corn, black beans, or feta cheese.
