Ingredients
  

Main Ingredients

  • 2 pounds bone-in chicken pieces (thighs and drumsticks)
  • 3 tablespoons Jamaican curry powder
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 large red bell pepper, sliced
  • 1 large tomato, diced
  • 1 can (13 ounces) coconut milk Fresh coconut milk can also be used for richer flavor.
  • 1 piece Scotch bonnet pepper (optional) Adjust heat level according to preference.

Preparation

  • Marinate chicken with salt and curry powder for at least 30 minutes.

Cooking

  • In a large pot, sauté diced onions in oil until translucent.
  • Add minced garlic and grated ginger, stirring well.
  • Add marinated chicken pieces to the pot and brown for about 7 minutes.
  • Stir in coconut milk and simmer for 25-30 minutes, or until chicken is tender.
  • Adjust seasoning to taste; remove Scotch bonnet before serving.

Notes

Serve over white rice or with Jamaican rice and peas. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months. Reheat gently with added water or coconut milk.
