Ingredients
  

For the marinade

  • 2 lbs chicken, cut into pieces
  • 2 tablespoons soy sauce
  • 1 teaspoon browning sauce
  • 2 cloves garlic, minced
  • 1 inch ginger, grated

For the stewing

  • 1 onion chopped
  • 1 bell pepper chopped
  • 2 sprigs thyme
  • 2 scallions chopped
  • 1 carrot sliced
  • 1 can diced tomatoes
  • 2 tablespoons vegetable oil
  • 1-2 cups chicken broth or water Add enough to cover the chicken

Preparation

  • Marinate the chicken with soy sauce, browning sauce, garlic, ginger, salt, and pepper for at least 30 minutes.

Cooking

  • Heat vegetable oil in a large pot over medium heat.
  • Add the marinated chicken pieces and brown on all sides.
  • Add onion, bell pepper, carrot, thyme, and scallions to the pot. Sauté for a few minutes.
  • Stir in the diced tomatoes and add enough chicken broth or water to cover the chicken.
  • Bring to a boil, then reduce heat to low and cover. Simmer for about 30-40 minutes until the chicken is cooked through and tender.
  • Serve with rice or your choice of sides.

Notes

For extra flavor, let the chicken marinate overnight. Use a mix of chicken pieces, like thighs and drumsticks, for a more flavorful dish. If you like more sauce, add an extra cup of chicken broth or water. Leftover stew can be stored in an airtight container for up to three days in the refrigerator, or frozen for up to three months.
