Ingredients
  

Ice Cream Base

  • 2 cups heavy cream Use high-quality heavy cream for the best texture.
  • 1 cup whole milk
  • 3/4 cup granulated sugar Divided into two parts for different stages.
  • 4 large egg yolks Make sure they are whisked well for smooth texture.
  • 1/2 cup salted caramel sauce Use high-quality sauce for the best flavor.
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon sea salt Add more for garnish if desired.

Preparation

  • In a medium saucepan, combine the milk, cream, and half of the sugar over medium heat. Stir until the sugar has dissolved.
  • In a separate bowl, whisk together the egg yolks and the remaining sugar until thick and pale.
  • Slowly pour the heated milk mixture into the egg yolks while whisking constantly.
  • Return the mixture to the saucepan and cook over medium-low heat, stirring constantly until it thickens and coats the back of a spoon.
  • Remove from heat and stir in the salted caramel sauce and vanilla extract.
  • Allow to cool, then refrigerate for at least 4 hours, or until completely chilled.
  • Churn the mixture in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency.
  • Transfer to a container and freeze until firm, about 4 hours.

Notes

Store your ice cream in an airtight container in the freezer for up to two weeks. Let it sit at room temperature for a few minutes before serving to make scooping easier.
