  • 1 lb chicken breast
  • 1 piece onion, chopped
  • 3 pieces carrots, diced
  • 2 stalks celery, diced
  • 4 cups chicken broth Homemade chicken broth enhances flavor.
  • 1 tablespoon turmeric powder Adjust if stronger flavor is desired.
  • 1 teaspoon ginger, grated
  • 2 cloves garlic, minced
  • to taste Salt and pepper
  • to taste Fresh parsley for garnish Adds color and flavor.

Instructions
 

Preparation

  • In a large pot, heat some oil over medium heat. Sauté the onion, carrots, and celery until softened.
  • Add the garlic and ginger, and cook for another minute.
  • Stir in the turmeric powder.
  • Add the chicken breast and chicken broth, and bring to a boil.
  • Reduce the heat and let it simmer for 20-25 minutes, or until the chicken is cooked through.
  • Remove the chicken, shred it, and return it to the pot.
  • Season with salt and pepper to taste.

Serving

  • Serve the soup hot in bowls, garnished with fresh parsley.

Notes

For a creamier soup, add a splash of coconut milk at the end. Can modify to include other vegetables or grains for variation. Store leftovers in an airtight container for 3-4 days in the fridge or freeze for up to 3 months.
