  • 4 cups shredded Brussels sprouts
  • 6 slices cooked bacon, crumbled
  • 1/4 cup candied nuts (pecans or walnuts recommended) For extra flavor, toast the nuts in a dry skillet.
  • 1/4 cup dried cranberries
  • 1/4 cup crumbled feta cheese (optional)

Dressing

  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon honey
  • Salt and freshly ground black pepper to taste

Preparation

  • Cook bacon until it is crisp. Drain on paper towels and crumble it into small pieces.
  • In a large bowl, combine the shredded Brussels sprouts, crumbled bacon, candied nuts, and dried cranberries.
  • If desired, add crumbled feta cheese to the mixture.

Dressing

  • In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, and honey. Season the dressing with salt and pepper to taste.
  • Pour the dressing over the salad ingredients in the large bowl.
  • Toss everything gently to combine well.

Serving

  • Serve immediately for the best flavor and texture.

Notes

Best enjoyed fresh. Store leftovers in an airtight container in the refrigerator, keeping the dressing separate until serving to maintain the crunch of the Brussels sprouts and bacon. The salad is best eaten within 1-2 days.
