Ingredients
  

Main Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon red pepper flakes (optional)

Thickening the Sauce

  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions
 

Preparation

  • Heat olive oil in a large skillet over medium-high heat.
  • Add chicken and cook until browned on all sides, about 5-7 minutes.

Cooking

  • In a small bowl, whisk together honey, soy sauce, rice vinegar, garlic, ginger, and red pepper flakes (if using).
  • Pour the sauce over the chicken in the skillet. Bring to a simmer, then reduce heat to low and cook for 5-7 minutes, or until chicken is cooked through and sauce has thickened slightly.
  • In a small cup, whisk together cornstarch and water until smooth. Pour into the skillet with the chicken and sauce. Stir constantly until the sauce thickens to your desired consistency.

Serving

  • Serve immediately over rice or with your favorite sides.

Notes

This dish is best served over a bed of fluffy rice. Consider adding sesame seeds or chopped green onions on top before serving. Store leftovers in an airtight container for up to 3 days.
