  • 1 medium fresh pineapple (about 3 cups chunks) Choose a ripe pineapple for the best flavor.
  • 1 tablespoon olive oil or coconut oil
  • ½ teaspoon ground cinnamon (optional) Enhances flavor, optional according to taste.
  • 1 tablespoon honey or maple syrup (optional) Use for added sweetness.
  • 1 pinch salt Balances sweetness.

Preparation

  • Cut off the top and bottom of the pineapple. Stand it upright and slice off the skin in strips. Use a small knife to remove the eyes, then cut the pineapple into 1-inch chunks.
  • In a mixing bowl, combine the pineapple chunks with oil, cinnamon, honey or maple syrup, and salt. Toss gently until they are evenly coated.

Cooking

  • Set your air fryer to 400°F (200°C) and preheat for 2 minutes.
  • Place the pineapple chunks in a single layer in the air fryer basket. Cook for 8 to 10 minutes, shaking or stirring halfway through to ensure even cooking. The pineapple should be golden brown with crisp edges and juicy centers.

Serving

  • Carefully remove the pineapple chunks from the air fryer and serve warm, either on their own or with a scoop of vanilla ice cream.

Notes

Store any leftover pineapple chunks in an airtight container in the refrigerator for up to 2 to 3 days. Reheat in the air fryer or microwave before serving again. Experiment with spices like nutmeg or ginger, and see variations for spicy or tropical fruit medleys.
