Air Fryer Cauliflower Hash Browns

A delicious and healthy twist on traditional hash browns, these Air Fryer Cauliflower Hash Browns are low in carbs, gluten-free, and offer a crispy texture without deep frying.

Ingredients
  

Main Ingredients

  • 3 cups cauliflower, riced (about 1/2 head) (or use thawed frozen cauliflower) Make sure to squeeze out moisture for extra crispiness.
  • 1 large egg
  • 1/4 cup all-purpose or almond flour
  • 3/4 cup cheddar cheese (shredded) You can experiment with different types of cheese.
  • 1/4 cup Parmesan cheese (grated)
  • 1/2 cup onion (chopped)
  • 1/4 cup red bell pepper (optional) Can be omitted or substituted with other vegetables.
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1/8 teaspoon cayenne pepper

Garnish

  • chopped parsley or sliced green onion For serving.

Instructions
 

Preparation

  • To rice the cauliflower, remove the leaves and the hard center stalk. Cut the cauliflower into smaller florets. Place them in a food processor and pulse until you get small rice-sized pieces.
  • If using frozen riced cauliflower, be sure to thaw it first.
  • Place the riced cauliflower in a large bowl and microwave it uncovered on high for 2 minutes. Allow it to cool for a few minutes.
  • Squeeze out any moisture from the cauliflower using paper towels.

Mixing

  • Return the dried cauliflower to the bowl. Add the egg, flour, cheeses, red bell pepper, onion, and spices. Mix everything together well.
  • Shape the mixture into 8 equal patties, each about 1/2 inch thick.

Cooking

  • Preheat the air fryer to 400°F for 5 minutes.
  • Spray the air fryer basket with cooking spray and lay 4 patties in the bottom. Spray the tops of the patties with oil.
  • Cook for 12-15 minutes, flipping halfway through. Spray the tops again after flipping.
  • The hash browns are done when they are nicely browned and crispy on top. Remove them from the air fryer and garnish with sliced green onions or chopped parsley.

Notes

These hash browns can be served alongside eggs and bacon or topped with avocado or sour cream. To store, let them cool completely and refrigerate in an airtight container for up to 3 days.
