  • ¾ cup crumbled feta cheese Or cubed block feta
  • ¼ cup fresh mint leaves Torn or chopped
  • 1-2 tablespoons olive oil
  • 1 tablespoon fresh lime or lemon juice
  • Salt and black pepper To taste
  • ¼ cup thinly sliced red onion
  • ½ cup arugula or baby spinach
  • Balsamic glaze drizzle
  • Chopped cucumber Optional for extra crunch
  • Toasted pine nuts or pumpkin seeds Optional for added texture
  • Fresh basil leaves As a substitute or addition to mint

Preparation

  • Cut the watermelon into bite-sized chunks. Remove any seeds if needed and place the cubes in a large mixing bowl.
  • Sprinkle crumbled feta and chopped mint over the watermelon.
  • In a small bowl, whisk together olive oil, lime or lemon juice, salt, and pepper.
  • Drizzle the dressing over the salad and toss gently to combine without breaking up the watermelon or cheese.
  • Serve immediately, or chill for 15-30 minutes to let the flavors meld.
  • Just before serving, drizzle with balsamic glaze or top with extra mint for a polished finish.

Notes

Store leftovers in an airtight container in the refrigerator for up to 1 day, keeping the dressing separate until ready to eat. Use seedless watermelon for best results and feel free to adjust feta according to taste.
