  • 1 cup Ricotta cheese Can substitute with cottage cheese or cream cheese.
  • 2 medium Fresh tomatoes Use ripe tomatoes for the best flavor.
  • 2 tablespoons Olive oil Extra virgin preferred for flavor.
  • 1/4 cup Basil leaves Fresh basil enhances the dish.

Preparation

  • Toast the sourdough bread until golden brown.
  • Spread a generous layer of ricotta cheese on each slice of toast.
  • Slice the fresh tomatoes and layer them on top of the ricotta.
  • Drizzle with olive oil and sprinkle with salt and pepper to taste.
  • Garnish with fresh basil leaves before serving.

Notes

This toast is best enjoyed fresh. Store leftovers separately and reassemble with fresh basil just before serving. Experiment with additional toppings or different types of sourdough.
