  • 1 cup full-fat cottage cheese (strained if watery) Strained to avoid excessive moisture.
  • 2 large eggs
  • to taste garlic powder Can be adjusted based on preference.
  • to taste Italian seasoning Can be adjusted based on preference.
  • a pinch salt
  • a pinch black pepper
  • to taste nutritional yeast (optional) For a cheesy flavor.

Preparation

  • Add the strained cottage cheese, eggs, and any optional seasonings to a high-speed blender. Blend for 20–30 seconds until smooth and uniform.

Cooking

  • Heat an 8–10 inch nonstick skillet over low to medium-low heat for at least 2 minutes. Lightly grease the pan to prevent sticking.
  • Pour about one-third of the batter (approximately 1/3 cup) into the center of the pan. Tilt and swirl to spread into a thin, even layer.
  • Cook undisturbed for 3–5 minutes until the top looks dry and edges lift from the pan. Flip and cook the other side for 1–2 minutes until golden.
  • Transfer the cooked wrap to a plate and let it cool for 2–3 minutes. Repeat with remaining batter.

Notes

Store leftover wraps in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or microwave. Experiment with different spices for added flavor. For thicker wraps, use more batter and reduce cooking time.
